Llama Unicorn Cake

Someone sent me a photo of an adorable Llama Unicorn and I immediately knew I had to make this on my twitch stream. I wish I could give credit to the original baker of this design, but I don’t know who it was! Apologies!

Here’s the second half of the making of this cake.

  • 1 tablespoon vanilla extract
  • 3 eggs room temp
  • 1 1/2 cups whole milk room temp
  • 1/3 cup vegetable oil

  1. Preheat the oven to 325 degrees. Line bottom of pans with parchment paper and spray with non stick cooking spray for baking.

  2. In a large bowl, sift together the cake flour, all purpose flour and baking powder. Set aside.

  3. In a medium bowl, stir together the whole milk and vegetable oil. Set aside.

  4. In the bowl of a standing mixer fitted with a paddle attachment, combine the butter and sugar and beat on medium speed until light and fluffy.

  5. Add the salt and vanilla.

  6. Set the mixer to low speed and gradually add the eggs one at a time until combined. Scraping as needed.

  7. Alternately add the flour mixture and milk to the butter mixture in two batches, starting with the flour. Scrape down the bowl between each addition and beat until thoroughly combined.

  8. Divide batter evenly between cake pans. Bake for approximately 1 hour or until a toothpick comes out clean.

Vanilla Buttercream

An easy to make yet delicious American buttercream recipe

  • 4 sticks unsalted butter softened
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup heavy cream
  • 6 cups powdered sugar

  1. In a stand mixer fitted with the paddle attachment, whip the butter until it is light and fluffy. Scrape down the sides of the bowl.

  2. Add vanilla, salt and heavy cream

  3. Slowly add the powdered sugar. Add more cream for a thinner consistency, or more powdered sugar for a thicker consistency.

  4. Turn mixer on high speed for 2 minutes to whip the buttercream until it's lighter in color. Hand stir to remove any air bubbles.

Recipe Notes

  • For Mint Chocolate Chip, add 1/2 tsp of Mint extract (not peppermint) at the same time as the vanilla. After adding the powdered sugar, add a tiny bit of green food color gel.  At the very end, hand stir in 1 1/3 cup of mini chocolate chips
