*Chocolate Ganache
Ganache can be used as a glaze, icing, sauce, or filling.

- 12 ounces chocolate (chopped into small pieces)
- 1 cup heavy cream
- 3 tbsp flavored liqueur (optional)
Instructions
- Place chocolate pieces into a large bowl. The higher quality chocolate, the better.
- Heat heavy cream on medium high until it comes to a boil. Remove from heat and immediately pour cream over chocolate and stir until chocolate is completely melted and smooth.
- If you plan to add any liqueurs, add it at this time.
- Allow the ganache to completely cool and set up. I put my ganache in the refrigerator to help it set up faster.
- Store leftover ganache in the refrigerator.
*Batter for Letters
Use this thicker batter to pipe details on roll cakes before baking

- 1/2 cup confectioners' sugar
- 3 tbsp butter (room temperature)
- 3 egg whites (room temperature)
- 1/4 tsp vanilla extract
- 2/3 cup all purpose flour
- 1-2 tbsp water (to thin the batter as needed)
Instructions
- Cream butter and powdered sugar
- Add egg whites and vanilla extract and beat until incorporated
- Gradually add the flour and mix well
- Divide batter into 5 portions and color with food coloring gels
- Fill piping bags with batter
- Using the Bears vs. Babies pattern, pipe the letters onto the parchment paper
- Freeze for 30 minutes
*Chocolate Sponge Roll Cake
This sponge cake is sweet, delicious and easy to roll. Add whipped cream and strawberries for extra elegance.

- 5 eggs (separated)
- 1 cup confectioners' sugar
- 1 teaspoon vanilla extract
- 1/4 cup all-purpose flour
- 1/4 cup baking cocoa
- 2 tablespoons sugar
Instructions
- Place egg whites in a small bowl; let stand at room temperature for 30 minutes.
- In a large bowl, beat egg yolks on high speed for 5 minutes or until thick and lemon-colored.
- Gradually beat in confectioners’ sugar. Stir in vanilla. Sift flour and cocoa into the egg mixture. Batter will be very thick.
- Beat egg whites on medium speed until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating on high until stiff peaks form. Gradually fold into batter.
- Remove Bears vs. Babies letters/parchment paper from the refrigerator. Grease a 13 x 18 x 1 inch baking pan and line it with the letters/parchment.
- Spread chocolate better evenly into prepared pan covering the letters.
- Bake at 375° for 12-15 minutes or until cake springs back when lightly touched. Cool for 5 minutes. Invert onto a kitchen towel dusted with baking cocoa. Gently peel off parchment paper. Roll up cake in the towel jelly-roll style, starting with a short side. Cool completely on a wire rack.
*Whipped Cream
