How to Make Hidden Meeple Cupcakes

Meeple Cutters (I used 1″ and 4″ meeple cutters)
A light and fluffy vanilla cupcake recipe packed with vanilla flavor!
- 3/4 cup unsalted butter room tempurature
- 1 1/2 cup granulated sugar
- 3 large eggs room temperature
- 2 tsp vanilla bean paste
- 3/4 cup buttermilk room tempurature
- 1/2 cup heavy cream room tempurature
- 2 1/2 cup cake flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Preheat oven to 350 degrees. Line two muffin tins with cupcake liners.
Whisk together the flour, baking powder, baking soda and salt and set aside.
Cream together the butter and sugar in an electric mixer until light and fluffy.
Add the eggs one at a time, beating to combine after each addition .
Add the vanilla, buttermilk and heavy cream.
Reduce speed to low and mix the flour in several additions. Stir the last bit of flour in by hand. It is important to not over mix.
Fill each muffin tin with ¼ cup of batter.
Place the cupcakes into the oven and bake at 350 degrees for 14 – 18 minutes.
Allow to cool completely before frosting the cupcakes.
Heavenly Vanilla Buttercream
So good that it's what people up in heaven get to eat!
- 2 cups (4 sticks) unsalted butter softened
- 5 cups confectioners sugar
- 2 tsp vanilla extract
- 2 tbsp heavy whipping cream
Mix softened butter on medium speed for 30 seconds until smooth and creamy.
Add confectioners sugar, heavy whipping cream and vanilla extract. Increase speed to high and beat for 3 minutes.
